This recipe just developed on its own over time. I started out with a basic chicken salad recipe and wanted to add in more of the healthy fats and protein. With the addition of avocado, almonds, hemp and chia seeds, this salad is boosted in nutrients with no processed ingredients or added sugar!
The best part is that you can add in or leave out any ingredient you do not have on hand and just “wing it”.
EVA'S "WORLD-FAMOUS" CHICKEN SALAD (PALEO, GRAIN-FREE, GLUTEN-FREE, DAIRY-FREE)
Ingredients:
Leftover shredded chicken from roasted chicken
1 apple chopped small
2-3 stalks celery, chopped small
handful of grapes, cut in halves/quarters
Creamy salad dressing:
About 1 cup homemade mayo/avocado mayo from Costco
1 T Dijon mustard
½-1 lemon squeezed, depending on how lemony you like the flavor
1 t apple cider vinegar
½ avocado
sea salt
pepper
½ t turmeric
pinch of stevia for a little sweetness
Optional add-ins:
¼ C sliced almonds
1-2 T capers
1 T hemp seeds
1 T chia seeds
Preparation:
Shred roasted chicken in food processor, remove and add to a large mixing bowl.
Chop apple and celery in food processor, remove and add to mixing bowl.
Cut grapes and add to mixing bowl.
In food processor, combine salad dressing ingredients and process until smooth. Transfer to mixing bowl
Mix all ingredients with optional add ins in mixing bowl. Adjust acidity (more lemon/apple cider vinegar), sweetness, saltiness and flavor with spices.
Serve on top of a bed of greens, on gluten-free toast, or with steamed vegetables.
